Individual gallery themes can be changed by clicking the "customize gallery" button (outside the gallery). You can also set the theme when first creating a gallery. In both cases, the "theme" option is right below Category, Subcategory, and Title.
There's also a "theme" drop-down menu on the upper right hand corner of each subcategory.
I am not sure if Standard users have this option, or if it just applies to Power and Pro users. The documentation doesn't really go into it, other than to say that advanced customization features are only available for Power and Pro.
